Michael's Favorite Breakfast Casserole.
   
Start with about 6 cups of tater tots.  You can use plain frozen ones but I think it tastes best if you go ahead and fry them up.  I used my "Fry Daddy" to quickly fry them in oil. 

Place them in a single layer in the bottom of a 9x13 baking pan.

Fry up 1 lb. of sausage and layer it on top of the tater tots
Sprinkle a good cup of cheddar cheese on top of the sausage.
Next scramble 12 eggs fairly hard.  Chop them up and layer them over top of the cheese.
Lastly make up a white sauce/gravy with 1/4 cup of butter and 1/4 cup of flour.  After browning the butter & flour well add about 2 cups of milk until the consistency is right.  Simmer for a little then add 1 -2 cups of sour cream.  Layer this gravy on top of the eggs.  Sprinkle freshly ground pepper on top then bake at 350 for about 40 minutes.    I usually make it up the night before and put it in the fridge overnight then pop it in the oven when we get up.
